Now that we've settled into our new house, this weekend I had the opportunity to test out our latest kitchen gadget. The Polyscience Sous Vide Professional immersion circulator was on my kitchen wish list since we purchased our home. I saw this device for the first time in action on Iron Chef. I was intrigued by its precision temperature control as well as its ease of use.
So what did I make?
Potato puree.
Now this isn't your normal dish of mash potatoes. This is the mash potatoes made famous by Joel Robuchon. It puts everyone else's mash potatoes to shame. It's that good. The step-by-step recipe can be found here.
The verdict: Perfection. The prep was a lot longer than what I would expect for a simple dish but it was well worth the 2 hours. I can't wait to try out other recipes from the Modernist Cuisine at Home cookbook.
